Recipe Ingredients for Crustless Quiche

1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 cup, chopped Onions
1.5 cup, diced Mushrooms, Portabella
3.5 cup Spinach
12 large Egg, White
1/4 cup Fancy Sharp Cheddar Shredded Cheese

Recipe Directions for Crustless Quiche

Saute all veggies. Beat egg whites lightly. Combine and pour into 9x9 pan. Bake at 350 for 35 minutes or until middle is done.
