8 egg whites
1 cup low fat cottage cheese
1/4 cup fat-free cheddar cheese
3 cups baby spinach
112 g ground turkey
1/2 cup mushrooms
1/2 cup red peppers

Recipe Directions for crustless quice - egg whites only

  1. Whisk the eggs and eggwhites together to blend, then combine all the other ingredients. I season this with salt, pepper, and occasionally some greek seasoning. Spray an pie pan with nonstick PAM cooking spray and pour the egg mixture into the pan. I usually bake this at 350 degrees fahrenheit (sometimes 375) for anywhere from 20-25 minutes.

  2. It provides breakfast for 4 mornings. Each service should come out to about 215 calories. I'm not sure on the macros after that, but it's pretty much an Atkinsy sort of breakfast. I know that's not what a lot of people on the boards follow, but I have to w/ my insulin issues.

  3. Other variations you could try might include black beans and corn with fat-free cheddar in a quiche; you can do tomato-mozzarella (fat-free or 2%) with basil; you can even try adding boiled potatoes chunked to provide a little added carbohydrate. Just be creative. You can do a lot of different things w/ this meal.
