I cut it into 8 pieces plus I poured the extra filling into 3 custard cups for a total of 11 servings. - Here's what I don't get. 1/8th of my pie weighs 2 oz or 57 greams. To get a piece to weigh 57 grams in the nutrition calculator, I have to put 22 servings in the box. That would be 1 wwpp! Good flavor, no crust, low fat, good fiber.

Recipe Ingredients for Crustless Pumpkin Pie

16 ounces pumpkin
2/3 c dry milk
12 oz water
3 egg whites
1/2 c brown sugar
1 oz Splenda No calorie
1 T molasses
1/4 c oat flour
1/4 c almond meal
3/4 t baking powder
1 1/2 t vanilla
1 T bourbon
1 1/2 t. cinnamon
1/2 t. ginger
1/4 t cloves
1/4 t nutmeg
1/2 t salt

Recipe Directions for Crustless Pumpkin Pie

  1. Preheat oven to 425. Mix all together in a blender. Pour into greased pie dish. Bake 15 minutes. Reduce heat to 350 degrees and bake 40 - 50 minutes longer. A knife in the center will come out clean.

  2. This pie improves drastically with time and chilling, say 1 hr to cool and several to chill (overnight if possible).
