A lighter version using splenda for baking and egg whites.

Recipe Ingredients for Crustless Pumpkin Pie

1 3/4 cups pumpkin
1/2 salt
1 1/2 cups 2% milk
3 egg whites
5 tablespoon splenda for baking
1 teaspoon splenda for baking
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger

Recipe Directions for Crustless Pumpkin Pie

Mix together, pour into pie plate. Bake for 15 minutes at 425 and then 40 minutes at 350. Scoop into bowl and eat like a pudding.
