A great way to enjoy the taste of Pumpkin Pie without all the fat (usually hiding in the crust)!

Recipe Ingredients for Crustless Pumpkin Pie

15 oz pumpkin puree
12 oz evaporated skim milk
3/4 cup Eggbeaters
1/2 tsp. salt
1 tbsp. pumpkin pie spice
1 tsp. Vanilla extract
2/3 cup sugar (for those of you that can't have sugar, I have also made this with splenda)

Recipe Directions for Crustless Pumpkin Pie

  1. Combine all ingredients in a large bowl and beat until smooth.

  2. Pour into a 9 inch pie pan sprayed with baking spray.

  3. Bake at 400 degrees for 15 minutes, then lower over to 325 and bake for an additional 45 minutes or until a toothpick inserted in the middle comes out clean.

  4. Cool completely and then put in refridgerator until ready to serve.

  5. A dollop of light whip cream adds to the festivities!
