This is a guilt-free pumpkin pie with all the great taste plus fiber and lots less fat than a standard pumpkin pie. Eliminate a few yolks for even less fat! This is a hit wherever I serve it!

Recipe Ingredients for Crustless Pumpkin Pie

1/2 cup brown sugar
3/4 cup Splenda or white sugar
1/2 cup flour
1/2 tsp baking powder
24 oz fat free evaporated milk
29 oz pumpkin
3 egg whites
1 egg
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
2 tsp vanilla

Recipe Directions for Crustless Pumpkin Pie

Preheat oven to 350. Butter a deep dish 10" baker or 9 X 13" pan. Mix dry ingredients and set aside. Mix wet ingredients then add dry. Pour into dish and bake for 55 to 65 minutes or until center no longer jiggles.
