Crustless Pumpkin Pie Recipe

the wonderful taste of pumpkin pie without all the fat and calories. you can use a pie pan but i would recommend using a springform pan for ease of removal.

Recipe Ingredients for crustless pumpkin pie

96 g (2/3 cup) brown sugar
1/2 tsp salt
1 tbsp cornstarch
1 tsp cinnamon
1/2 tsp ginger
1/8 tsp cloves
1/8 tsp nutmeg
1 eggs
2 egg whites
425 g (15oz can)pureed pumpkin
354 g (12oz can) fat free evaporated milk

Recipe Directions for crustless pumpkin pie

  1. combine sugar, salt, cornstarch, cinnamon, ginger, cloves, and nutmeg in a large bowl.

  2. slightly beat the eggs and add into spice mixture.

  3. add in pumpkin and mix until combined.

  4. carefully add in evaporated milk and stir.

  5. pour into 9" pie or 9" springform pan that has been sprayed with cooking spray.

  6. bake at 425F for 15 minutes, then turn heat down to 350 and continue baking for and additional 30-45 minutes or until center is just set.

  7. let cool for at least 2-3 hours. for ease of cutting i recommend chilling it in the fridge.
