Low-fat mini quiches for quick breakfasts

Recipe Ingredients for Crustless Mini Quiches

1 tbl olive oil
1 cups broccoli, chopped
1 cup low-fat cheddar cheese, shredded
1 cup low-fat yogurt, plain
2 tbl fat-free milk
4 tbl egg whites
1 tsp Italian seasoning
1/4 cup onion, diced
1/4 cup spinach
1/4 tsp sea salt

Recipe Directions for Crustless Mini Quiches

  1. Preheat oven to 350 degrees. Spray 12 muffin cups with cooking spray.

  2. Heat Olive oil in non-stick skillet. Saute broccoli, onions and spinach. Distribute evenly through all 12 muffin cups.

  3. Distribute 1/2 of the cheese over vegetables in muffin cups.

  4. In a med bowl whisk together, yogurt, egg whites and seasonings. Distribute egg mixture evenly between muffin cups over top of cheese and vegetables.

  5. Top egg mixture with remaining cheese. Bake for 20 to 25 minutes or until quiches are set and lightly browned around the edges.

  6. Cool 5 minutes before serving. Can be refridgerated or frozen and reheated in microwave.
