Recipe Ingredients for Crustless Mini Quiche with Mushroom, Spinach and Cheese

5 eggs, large
9 tablespoons egg whites
1/2 cup unsweetened almond milk
1/3 cup 6 Cheese Italian Shredded Cheese
10 ounces mushrooms, sliced
6 ounces baby spinach
1/2 tablespoon minced onion
1/2 teaspoon garlic salt
1/4 teaspoon cayenne pepper
1 tablespoon olive oil

Recipe Directions for Crustless Mini Quiche with Mushroom, Spinach and Cheese

  1. Position rack in center of oven; preheat to 325F. Coat a nonstick muffin tin generously with cooking spray.

  2. Heat a large nonstick skillet over medium-high heat. Add olive oil and mushrooms and cook, stirring often, until golden brown, 6 to 8 minutes. Add spinach and wilt. Let cool for 5 minutes.

  3. Whisk eggs, egg whites and milk in a medium bowl. Add garlic salt and cayenne pepper and whisk to mix. Divide the egg mixture evenly among the prepared muffin cups. Divide cheese among the cups. Sprinkle a heaping tablespoon of the mushroom mixture into each cup.

  4. Bake until the tops are just beginning to brown, 28 minutes. Let cool on a wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto the rack. Turn upright and let cool completely.
