Recipe Ingredients for Crustless Leek, Kale, Mushroom Quiche

2 tablespoons butter
2 cups diced leeks
7 eggs
1 cup Fennel
1 cup Mushrooms
20 oz Kale
1 cup colby
1/4 cup cheese for parmesan
4 oz extra firm tofu
1/3 cup skim milk
1/4 c flax seed

Recipe Directions for Crustless Leek, Kale, Mushroom Quiche

  1. Preheat oven to 450 degrees.

  2. Ingredients

  3. Melt butter in a skillet over medium heat, and sauté the leeks, fennel, Kale and mushrooms until tender add salt and pepper. Add flax seed and tofu here and take off heat. In a bowl, toss together the cheese and flour. Spread over the leeks and other ingredients.

  4. In a separate bowl, beat together the eggs and milk. Pour over cheese layer in the pie crust. Season with salt and pepper again.

  5. Bake 15 minutes in the preheated oven. Reduce heat to 325 degrees, and continue baking 30 minutes, until the crust is lightly browned and a knife inserted in the center of the quiche come outs clean.
