Recipe Ingredients for Crustless Ham and Spinach Quiche

9 egg whites
16 oz. low-fat cottage cheese
3 oz. part-skim mozzarella cheese
3 cups raw spinach
1/4 tsp garlic salt
1/4 tsp pepper
1/8 tsp onion powder

Recipe Directions for Crustless Ham and Spinach Quiche

  1. Preheat oven to 350 degrees.

  2. Dice turkey ham.

  3. Spray skillet with nonstick cooking spray, and add spinach, cooking and stirring over Medium heat until wilted. Remove from skillet, and add diced ham, cooking and stirring until browned.

  4. Place spinach on paper towel and pat dry to remove any excess moisture. (I also cut the spinach up a bit more after cooking it so that the pieces aren?t too big.)

  5. Spray bottom of pie plate with nonstick cooking spray.

  6. In a bowl, combine egg whites, ham, spinach, cheeses, garlic salt, pepper, and onion powder, stirring until combined.

  7. Pour into pie plate.

  8. Bake for 35-40 minutes until eggs are set and a toothpick comes out clean.
