Quiche... Frittata.... whatever. No crust means no extra calories or carbs!

Recipe Ingredients for Crustless Goat Cheese, Red Pepper & Spinach Quiche

1 1/4 cup skim milk
5 eggs
1 pkg frozen spinach
1/2 cup roasted red peppers
4 oz goat cheese
1 tsp salt
1 tsp pepper
2 tsp oregano

Recipe Directions for Crustless Goat Cheese, Red Pepper & Spinach Quiche

  1. Preheat oven to 375F. Spray pie pan with cooking spray.

  2. Whisk together milk and eggs with salt, pepper and oregano.

  3. Line bottom of pie pan with spinach, red peppers and goat cheese (THAT ORDER).

  4. Pour egg mixture over fillings and bake for approximately 40-45 minutes, or until a knife is inserted and comes out clean.

  5. Serve with a side of salad for a meal!
