I love crustless quiche when I am trying to lose weight. It is easy to prepare and very satisfying for almost any meal. Feel free to try other vegetables in it. If you want to cut back on the fat a little more, use 2 eggs and 3 egg whites instead of 4 eggs.

Recipe Ingredients for Crustless Cottage Cheese Quiche

4 eggs
5 mushrooms, sliced
100 g non-fat cottage cheese, onion and chive variety for preference
1 onion, finely chopped
25 g shredded cheese (optional)
1 tomato, sliced
1 salt, pepper, and parsley

Recipe Directions for Crustless Cottage Cheese Quiche

Preheat your oven to 400F and spray a 20cm square pan or Springform pan with olive oil spray. In a small bowl, whisk the eggs with the cottage cheese until well combined and fold in the diced onion, mushrooms, and cheese (if using). Pour into your pan and top with tomato slices. Bake for approximately 30 minutes, or until the eggs have set and the top has gone as golden as you like it. Serves 4, or 2 if you're very hungry, and keeps well in the fridge.
