Recipe Ingredients for Crustless Coconut Cream Pie

2 cups 2% milk
3 tbsp. cornstarch
1/2 cup sugar
1/4 cup cold 2% milk
2 large eggs
2 tsp margarine
3/4 tsp vanilla
1/2 cup coconut

Recipe Directions for Crustless Coconut Cream Pie

Over double boiler, heat 2 cups of milk. Mix cornstarch, sugar, salt with cold milk. Add gradually to hot milk, stir and cook over boiling water until thick(this may take 30 min. or more), cover and cook for an additional 20 min. Add yolks of well beaten eggs, cook for 3 min. Remove from heat, add margarine, vanilla and cocoanut. Pour into 6 small bowls. This can also be put into a baked 9" baked pie crust but this is not included in the nutritional value. If so, whipp egg whites, sprinkle with extra cocoanut and brown under broiler until golden.
