Can use spinach or different cheeses. Original recipe called for 5 eggs but I used 4 egg yolks and 6 egg whites instead.

Recipe Ingredients for Crustless Broccoli Quiche

1 tbsp. canola oil
1 onion
10 ounce chopped broccoli
4 egg yolks
6 egg whites
3 cups shredded cheddar cheese
1/4 tsp. salt
1/2 tsp pepper

Recipe Directions for Crustless Broccoli Quiche

  1. Preheat oven to 350 degrees. Lightly grease a 9 inch pie pan.

  2. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occassionally, until onions are soft. Stir in broccoli and continue cooking until excess moisture has evaporated.

  3. In a large bowl, combine eggs, cheese, salt and pepper. Add broccoli mixture and stir to blend. Scoop into prepared pie pan.

  4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool 10 minutes before serving.
