Recipe Ingredients for crustless broccoli feta cheddar quiche

1 cup egg beaters
1/3 c whole wheat flour
2 tsp garlic, minced
1 tbls thyme (or dill, or mint)
1/4 tsp pepper
1/8 tsp salt, kosher
1 1/2 cup cottage cheese, lowfat 1%
10 ounces broccoli, frozen package
4 ounces feta cheese, lowfat
4 ounces cheddar cheese, reduced fat

Recipe Directions for crustless broccoli feta cheddar quiche

  1. preheat oven to 350. lightly coat a 9 inch pie pan with cooking spray

  2. in a medium bowl, combine eggs, flour, garlic, dill, pepper, and salt. stir in cottage cheese broccoli, feta, and cheddar. spoon in the pie pan. (you can divide it up into a muffin tin, just divide by 12)

  3. bake for 40 - 45 minutes or until a knife inserted near center comes out clean. cool on rack for 5-10 minutes before serving.
