Using Granny Valle's recipe, I just substituted lower calorie & lower-fat options (and the lactose-free milk option since milk ain't my best friend). I would suggest putting the pie plates on a cookie sheet here, though - so as not to burn the bottom of the pies.

Recipe Ingredients for Crust-less, Diet Pumpkin Pie (From Granny Valle's recipe)

1 c egg beaters
3 1/2 c pumpkin
1 1/3 c Splenda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
4 tbsp margarine, light
1 3/4 c soy milk, light

Recipe Directions for Crust-less, Diet Pumpkin Pie (From Granny Valle's recipe)

  1. Beat egg beaters slightly; Add pumpkin, sugar, salt & spices. Mix well.

  2. In a separate saucepan, heat milk & margarine until the margarine melts (without scalding the milk).

  3. Add hot milk & margarine to the pumpkin mixture & stir well.

  4. Spray 2 deep dish (9") pie pans with Pam or other cooking spray (NOT butter flavor).

  5. Pour into prepared pie pans & place on a cookie sheet.

  6. Bake in 450 degree (F) oven for 15 minutes, then reduce the heat to 350 degrees (F). Bake 35-40 minutes until filling is set and firm (a knife inserted in the center comes out clean).
