These salmon cakes aren't anything like the salmon croquettes made in the 1950's. With their crunch of peppers and balance of flavors, you won't be able to stop eating them. I used fresh cooked salmon not canned.

Recipe Ingredients for Crunchy Salmon Cakes

40 oz salmon
1 cup panko
2 egg
1/2 cup celery, chopped
1/4 cup red onion, chopped
1/4 cup bell pepper, red
1/4 cup bell pepper, yellow
1 1/2 teaspoon capers, drained
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup mayonnaise
1 teaspoon Dijon mustard

Recipe Directions for Crunchy Salmon Cakes

  1. Combine all ingredients except for butter and oil.

  2. Divide into 10 equal portions and form into patties.

  3. Broil under med heat about 5 mins, turn and another 5 mins.
