Fast, easy and scrumptious one dish salad. (Omit chicken for a lovely side dish salad.)

Recipe Ingredients for Crunchy Pear Salad

1 pear, ripe, thinly sliced
4 c baby spinach
2 tbs balsamic vinegar
2 tbs low-sodium chicken broth
2 tsp Dijon mustard
1 tbs shallot, minced
1/2 c Parmesan cheese, shavings
1/4 c walnuts, small pieces
1/2 lb chicken breast, meat only

Recipe Directions for Crunchy Pear Salad

  1. Cut chicken into bite-sized pieces and saute until cooked through - 8-10 minutes.

  2. Toss pear slices and spinach in a large bowl.

  3. Whisk together vinegar, broth, mustard and shallot.

  4. Toss pear & spinach with enough dressing to coat evenly. Plate and top with chicken, Parmesan shavings and walnut pieces.

  5. Serve immediately.
