A quite low calorie cake with a yummy(!!) peanut butter top.

Recipe Ingredients for Crunchy peanut butter cake

3/4 cups all purpose flour
1 cup whole wheat flour
1/3 cup brown sugar
1/3 cup sugar
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup smart balance light, room temperature
3/4 cup low-fat buttermilk
1 large egg
1/2 cup raisins
1 cup crunchy peanut butter, room temperature

Recipe Directions for Crunchy peanut butter cake

  1. Preheat oven to 350F. Grease(lightly) a 9-inch square baking pan.

  2. In a large bowl, whisk together flour, brown sugar, sugar, cinnamon, ginger, baking powder, baking soda and salt. Beat in the smart balance well. Then put aside 3/4 cup of the mixture to a medium bowl.

  3. Add the buttermilk and eggs to the large bowl with the remaining flour mixture. Stir well, then stir in raisins. Pour into prepared the pan.

  4. Add the crunchy peanut butter to smaller bowl with what is left (3/4 cup)or the flour mixture. Stir the mixture thoroughly and crumble onto the cake batter.

  5. This cake bakes for about 30 minutes, until you can stick a knife in the center without it coming out with batter stuck on it.

  6. Let the cake cool on a wire rack before slicing.
