Recipe Ingredients for Crunchy Oven-fried Fish

4 oz Bread Crumbs, Dry, Grated, Seasoned
2 tbsp I Can't Believe It's Not Butter! Fat Free
2 large Egg, White
1 tbsp Mayonnaise
1/2 tsp Paprika
1/4 serving Cayenne Pepper
24 oz Cod
1/2 cup Flour

Recipe Directions for Crunchy Oven-fried Fish

  1. Adjust oven rack to middle postion and heat to 350.

  2. Place 1/4 cup flour to plate. In second plate, whisk eggs, mayonnaise, paprika, cayenne and 1/4 teaspoon pepper until combined. Whisk in remaining 1/4 cup plus 1 tablespoon flour until smooth.

  3. Spray wire rack with vegetable oil spray and place in rimmed baking sheet. Dry fish thoroughly with paper towel. Dredge in flour and skate off excess. Using Tongs coat fillet in egg mixture, press gently so that a thick layer of crumbs adheres to fish. Transfer breaded fish to prepared wire rack. Repeat with remaining fish.

  4. Bake fish until fillets register 140 degrees, 18 to 25 minutes. Using thin Spatula, transfer fillets to plates and serve.
