If you want crunchy use butter instead of apple spread. Otherwise you get a nice soft chewy cookie. Awesome and low fat.

Recipe Ingredients for Crunchy (Or Not) All Bran Cookies

310 g Apple Stroop (1 cup to replace 1 cup butter)
1/2 cup brown sugar Splenda blend
1 egg
1 tsp vanilla extract
1 oz Cointreau
225 g Nutriflour
139 g Compliments Quick Oats (104 g Quaker Quick Oats)
43 g chopped walnuts
45 g dried pecans
60 g all-bran cereal, crushed (Kellogg's or Weetabix)
1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Recipe Directions for Crunchy (Or Not) All Bran Cookies

  1. Preheat oven to 350 degree F.

  2. In small bowl: Cream the apple spread.

  3. Add sugar and beat until fluffy. (I would actually suggest perhaps half the sugar since the apple spread is pretty sweet.)

  4. Add egg and vanilla and beat well.

  5. Add shot of Cointreau.

  6. In large bowl combine all other ingredients.

  7. Add gradually together until well blended.

  8. Drop by rounded teaspoons onto lightly greased cookie tray.

  9. Bake for 15 mins or until golden and firm.

  10. Cool on rack.
