This is an easy and very tasty Casserole.

Recipe Ingredients for Crunchy Chicken Casserole

1 lb Chicken Breast, skinless,cubed
1 lb Chicken Thigh, skinless, cubed
2 tsps Canola oil
1/4 tsp salt
1/4 tsp pepper
1/2 c Pimientos, from a jar
1/4 cup Fresh Carrots, thinly sliced
1/2 cup Mushrooms, sliced
1/2 cup Green Onions, thinly sliced
1/2 cup Celery, thinly sliced
1/2 can Cream of Chicken Soup, Condensed
1 cup Chicken Broth, salt reduced
1/2 cup Shredded Cheddar Cheese (4 ounces)
1/2 cup Bread Crumbs, Seasoned
1/4 tablespoon Savory
1/4 tablespoon Thyme
3 c Noodles, Spinach, Cooked

Recipe Directions for Crunchy Chicken Casserole

  1. 1. Heat oven to 350°F. Grease an 11 x 7 x 2-inch baking dish; set aside.

  2. 2. Sauté chicken in oil in a skillet over medium-high heat until no longer pink. Season with salt and pepper. Arrange chicken and vegetables in prepared baking dish; set aside.

  3. 3. Melt butter in a saucepan over medium-low heat. Stir in flour and seasonings; cook until smooth. Gradually stir in broth and soup. Bring to a boil; cook, stirring, 2 minutes or until thickened and bubbly. Stir in cheese until melted; spoon over chicken.

  4. 4. Combine bread crumbs, savory and thyme, add margarine and liquid to make stuffing; sprinkle over chicken. Bake, uncovered, 25 to 35 minutes or until golden brown. Serve over noodles or rice.
