A healthy, but still tasty version of banana bread or muffins.

Recipe Ingredients for Crunchy Banana Muffins

1 cup whole wheat flour
1/2 tsp salt
3/4 cup oats
1/4 cup honey
1/2 cup skim milk
2 1/2 tsp baking powder
1/4 tsp baking soda
1 egg
3 tbsp canola oil
1/2 cup bananas

Recipe Directions for Crunchy Banana Muffins

  1. Sift flour, baking powder, baking soda, and salt. Add oats and remaining ingredients and stir with fork just until dry ingredients are moistened. Fill muffin cups 2/3 full. Bake at 400 degrees for 18-20 minutes.

  2. (Double recipe and bake longer for one loaf of banana bread.)
