Home made crumpets - filling for lunches

Recipe Ingredients for Crumpets

4 cups plain flour
2 tbs baking powder
1 1/2 tsp salt
1 1/2 tsp sugar
3 cups water, warm
1 tsp dry yeast

Recipe Directions for Crumpets

  1. Sift flour, baking powder, sugar and salt into large bowl. If you are using compressed yeast, dissolve in water and add to dry ingredients. Beat until smooth.

  2. Crumpets can be cooked in a lightly greased frying pan (over low heat) with lightly greased egg rings. Heat the egg rings by placing them in the pan. When hot, 3/4 fill the rings with batter.

  3. Allow to cook over a low heat for approximately 10 minutes, or until surface is covered in holes. Remove rings, then cover pan and allow crumpets to cook for a further 2-3 minutes, or until surface has set.

  4. Remove from pan, cool on wire rack. When cold, toast and serve with butter and honey.
