This cake is extremely dense and buttery, so it is best to side it with something light and flavourful - fruit, perhaps.

Recipe Ingredients for Crumbly Almond Cake

2 cups plain flour
2 cups finely ground almonds
1 cup sugar
1/4 teaspoon salt
3/4 cup butter, cut up
4 large eggs, lightly beaten

Recipe Directions for Crumbly Almond Cake

  1. Preheat the oven to 350F.

  2. Butter and flour a ten inch springform pan.

  3. Mix the flour, almonds, sugar, and salt in a large bowl.

  4. Use your fingers to rub the butter and eggs into the dry ingredients until the dough resembles large crumbs. It should be quite dry and crumbly.

  5. Transfer the dough to the prepared pan, pressing it down firmly.

  6. Bake for 35-45 minutes, or until a toothpick inserted into the centre comes out clean.

  7. Cool the cake in the pan for 10 minutes. Loosen the pan sides and let cool completely.

  8. Cut or break into irregular diamond shapes to serve.
