High protein crumble with fruit compote

Recipe Ingredients for Crumble Topping


Crumble:
60 g (0.75 cup) Rolled Oats
60 g (0.75 cups) Oat bran
30 g (0.25 cups) unsweetened desiccated coconut
30 g (0.25 cups) almonds, dry roasted, chopped
20 egg whites (85g vanilla protein powder)
2 egg whites (Real egg whites)
1/2 cup water, warm
1 teaspoon vanilla extract
1 tsp cinnamon

Fruit:
200 g apple, granny smith, cut into chunks
100 g cherries, pitted
10 g xanthun gum
10 ml lemon juice

'Cottage Cheese Custard':
350 g cottage cheese
7 egg whites (30g vanilla protein powder)

Recipe Directions for Crumble Topping

  1. Preheat oven to 350-degrees.

  2. For the Fruit base: Chop apple and zap quickly in the microwave to start to soften. Combine with cherries, gum and lemon juice

  3. For the Top: In a large bowl, combine oats, oat bran, nuts/coconut, protein powder, and cinnamon. Mix together egg whites, water, and vanilla. Stir into dry ingredients.

  4. To prepare: Spread the fruit base into a pie dish and spoon crumble mix onto top. Cook in oven until fruit softens and topping is crispy.

  5. To serve: Spoon serving into a bowl and top with 1/6th of 'cottage cheese custard'.
