Simple chicken salad aimed for high protein.

Recipe Ingredients for Crumbed Chicken and Salad - No Dressing

1 (250g) Chicken breast
4 (60g) Eggs
2 cup lettuce, sliced
1/2 cup carrot, grated
1/2 cup cucumber, sliced
1/4 cup tomato, sliced
1 tbsp onion, diced
1 cup flour
2 cup bread crumbs

Recipe Directions for Crumbed Chicken and Salad - No Dressing

  1. Crack one egg into a single bowl.

  2. Slice chicken breast into strips 6 strips

  3. Lightly cover breasts in flour

  4. Dip each strip into the eggs before lightly covering in bread crumbs (can add spice to the crumbs for added flavour).

  5. Fry in olive oil or roast strip until crumbs are brown

  6. Add remaining eggs, beat then fry into an omelete

  7. Dice omelet into small squares

  8. Mix all salad ingredients in a bowl with sliced egg

  9. Serve chicken strips on top of the bed of salad
