Recipe Ingredients for Crumbed asparagus with parma ham

12 asparagus spears
3 tsp olive oil
80 g parma ham
50 g rye bread
1 tsp pumpkin seeds
1 tsp lemon zest
1 clove garlic

Recipe Directions for Crumbed asparagus with parma ham

  1. Preheat the oven to 200C/400F/Gas mark 6

  2. Wash the asparagus spears thoroughly, put them in a baking tray, add a teasooon of olive oil and lightly coat each spear in the oil.

  3. Roast for 10-12 minutes until just tender.

  4. While the asparagus cooks make the topping: blitz the breadcrumbs, garlic (chopped) and seeds.

  5. Add the lemon zest and 1 tsp olive oil.

  6. Group the spears into bundles and wrap each bundle in parma gam.

  7. Top each parcel with somme of the topping and brown gently under the grill for about 5 mins.

  8. Serve with a mixed salad
