From "The Complete Italian Vegetarian Cookbook" by Jack Bishop. Use fresh thyme sprigs, if possible. The bread should be country style bread. The original recipe calls for country style white bread, but I prefer whole wheat. I used whole wheat French bread. This recipe came out rather dry.

Recipe Ingredients for Crostini with Oven-Roasted Mushrooms

3/4 pounds cremini mushrooms
1/4 cup extra-virgin olive oil
1 salt, to taste
1 black pepper, freshly ground, to taste
1 tablespoon fresh thyme
8 slices whole-wheat bread

Recipe Directions for Crostini with Oven-Roasted Mushrooms

  1. Preheat the oven to 400 degrees. Trim a thin slice from the stem end of each mushroom. Wipe the caps clean with a towel. Halve the smaller ones and quarter the larger ones. Place the mushrooms in a roasting pan large enough to hold them in a single later. Drizzle the oil over them and toss gently to coat evenly. Season with salt and pepper to taste. Scatter the thyme sprigs around the mushrooms.

  2. Roast, turning the mushrooms once or twice, until golden brown and a bit crusty, about 20 minutes. During the last 10 minutes of the cooking time, place the bread slices on a baking sheet. Bake on another shelf of the oven, turning the slices once, until lightly browned and crisp, 8 to 10 minutes.

  3. When the mushrooms are done, taste them and adjust the seasonings. Place the toasted bread slices on a large platter. Spoon some of the mushrooms over each slice. Serve immediately.
