Recipe Ingredients for Crockput Chicken Curry

3 lb chicken leg, bone in
1/2 teaspoon peanut oil
12 oz coconut milk
10 oz chicken broth
1 lb frozen stir fry vegetables
1 potato
6 tbs curry paste
1 fish sauce to taste
1 peanut butter to taste
1 lime juice to taste

Recipe Directions for Crockput Chicken Curry

  1. Brown chicken legs in skillet, until both sides are golden brown.

  2. While chicken is browning, dice potato into approximately one inch cubes.

  3. Put chicken aside, discard all but 2tbs of chicken fat in pan, and use to saute the six tablespoons of curry powder, until fragrant.

  4. Put chicken in pan, cover with one can coconut milk, about 10oz of chicken stock, the frozen veggies, potato, and sauteed curry paste.

  5. Stir until curry paste is integrated into the liquid, then add fish sauce, peanut butter, and lime juice to taste.

  6. Let cook in crockpot on low until meat is falling off the bones.

  7. Remove chicken, remove meat from bones. Discard bones and return meat to pot.

  8. Serve over rice.
