Recipe Ingredients for Crockpot Pumpkin Chicken Chili

2.5 serving Diced Original Tomatoes and Green Chilies
15 oz Pumpkin
2 serving Chicken 33% Less Sodium Broth Rtsb
1 large Onions
6 cloves, raw Garlic
2 serving Chile Powder
1 tsp Cumin
0.33 tablespoon Oregano
0.75 tsp Coarse Sea Salt
0.25 tsp Pepper, Black
12 oz Fresh Boneless Skinless Chicken Breasts
1.25 cup Frozen Cut Corn
1 tbsp Coriander Leaf, Dried

Recipe Directions for Crockpot Pumpkin Chicken Chili

  1. 1. To a 4 or 5 quart crockpot add tomatoes, chicken broth and pumpkin. Whisk until well combined; add onion, garlic, chile powder, cumin, oregano, salt, pepper and chipotles; combine well. Add chicken, chickpeas and corn. Cook 4-5 hours on high or 6-8 on low.

  2. 2. When ready to serve remove chicken and chop into bite-size pieces or shred with two forks. Add back to pot, stir in cilantro and serve with sour cream, shredded cheddar, green onions, guacamole and/or tortilla chips.

  3. Makes 6 servings
