This is so easy, mix the ingredients up front and put in a large Ziplock. when you're ready to make it, throw it all in the crockpot!

Recipe Ingredients for Crockpot Posole

29 oz hominy
40 oz chopped green chilis
1 med onion, chopped
2 cloves garlic
1 lb chicken breast, boneless, skinless, cut into 1" pcs
14 1/2 oz tomatoes, drained and cut up
15 oz chicken broth, reduced sodium
1 t oregano
1/2 t cumin
2 T cilantro, fresh, snipped

Recipe Directions for Crockpot Posole

  1. Place hominy, chili peppers, onion, garlic, chicken, tomatoes, chicken broth, oregano and cumin in a 3 1/2, 4 or 5 quart crockpot/slow cooker. Cover and cook on low for 5 to 6 hours, or on on high for 3 hours. Stir in cilantro when ready to serve. Optionally, garnish with sour cream and extra cilantro.

  2. For a little more kick, add a Tablespoon of Chipotle Chili Powder or 1 teaspoon of Smoked Paprika.
