Crockpots, or slow cookers, make healthy eating a bit easier. Place ingredients in cooker in the morning and come home to a hot, nutritious meal. Chickpeas are a good source of fiber.

Recipe Ingredients for Crockpot Italian Chickpea Stew

3 c cooked chickpeas
28 oz crushed tomatoes
15 oz tomato sauce
1 onion, chopped
3 c chicken broth
10 oz frozen spinach, thawed
1/4 c garlic, minced
1 tbs basil
1 tbs oregano

Recipe Directions for Crockpot Italian Chickpea Stew

  1. Combine all ingredients in a crockpot (slow cooker) and cook on LOW for approximately six hours. Serve as is or over brown rice.

  2. Alternatively, this stew can also be cooked on a conventional stove: combine ingredients in a large pot. Simmer on low for about 30 min.

  3. Note: 3 C chickpeas equals 2 15-16 oz cans.
