Recipe Ingredients for Crockpot Egg Casserole

32 oz frozen hash browns
1 lb ham, cooked and cubed
1 onion, chopped
1 green bell pepper, chopped
1 tbsp olive oil
1 1/2 c reduced fat cheddar, shredded
12 eggs
1 c 1% milk
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Crockpot Egg Casserole

  1. Spray cooker with nonstick.

  2. Cook onion and pepper in olive oil until crisp tender and let cool.

  3. Layer in cooker, 1/3 hash browns, 1/3 ham, 1/3 veggies and 1/3 cheese. Repeat 2 more times ending with cheese.

  4. Beat together eggs, milk, and seasonings. Pour over layers. Cover and cook on low for 8-10 hrs.
