Recipe Ingredients for Crockpot Curry Chicken

2 tbsp curry powder
1 tsp coriander
1 tsp cumin
30 g fresh ginger
3 cloves garlic
14 oz coconut milk
1/2 tsp tomato paste
4 frozen chicken thighs, boneless, skinless
15 oz garbanzo beans, drained & rinsed
1 yellow onion, chopped
1/2 eggplant, chopped
1 green bell pepper, chopped
1 sweet potato, peeled & chopped

Recipe Directions for Crockpot Curry Chicken

Use 6 quart slow cooker. Assembled the spices, ginger, garlic, coconut milk, and tomato paste. Add chicken, flipping it to coat. Pour in Garbanzo beans and veggies. Don't stir. Cover and cook on low for 7-9 hrs or on high 4-6 hrs. Stir before serving. Serve over rice or barley.
