Savory, comforting, almost buttery stew you can eat all week! Not spicy, but has tons of flavor.

Recipe Ingredients for Crockpot Chickpea Coconut Curry

30 oz chickpeas
3 medium carrots
4 cups chopped broccoli
1 cup frozen peas
1 medium onion, chopped
3 garlic cloves, minced
3 tsp curry powder
1 tsp ground coriander
1/4 tsp crushed red pepper flakes
2 1/2 cups vegetable broth
1 cup Lite
1/2 cup Short Grain Brown Rice

Recipe Directions for Crockpot Chickpea Coconut Curry

Put all ingredients in a crock pot. Set pot on low for 6 hours or hi for 3 hours. You can use any veggies instead of broccoli: cauliflower, green beans, etc...Drain chick peas, of course, before adding to stew. I make this on Sunday and eat it for lunch all week.
