I like to prep the night before and throw everything into to pot in the morning before heading off to work. Dinner is ready by the time I get home!

Recipe Ingredients for Crockpot Chicken Stew

12 oz chicken Thigh, meat only
5 carrots, peeled, chopped
4 Celery stalks, chopped
1/2 Yellow Onion, chopped
4 medium Red potatoes, peeled, chopped
3 tsp chicken bouillion
1 tbsp basil
1 tbsp parsley
4 cloves of garlic
2 tsp salt

Recipe Directions for Crockpot Chicken Stew

  1. Boil 4 Chicken thighs (bone and skin included) in a stew pot of water with 4 cloves sliced garlic, 2 tsp chicken bouilion, and salt. Once boiling, reduce heat and allow to simmer for 1 1/2-2 hours.

  2. Remove Chicken from pot. Allow chicken and Broth to cool enough to handle.

  3. Remove chicken from the bone and skin. Chop chicken.

  4. Strain Broth through triple layered cheese cloth to removed fat from broth, discard garlic and fat.

  5. Place chicken and vegatables into crockpot. Fill pot with strained broth. Stir in basil, parsley, 1 tsp chicken bouillion.

  6. Allow to cook on low for 6-8 hours.

  7. We usually make this stew stretch a day or two by topping off the broth and adding more veggies the following day.
