This is a easy, filling meal. I live by myself so I make one pot and it lasts for 9 meals. A serving size is a cup and it is really filling. I use 98% fat free cream of mushroom soup and reduced sodium taco seasons.

35 grams taco seasoning
15 oz black beans
2 cups brown rice
16 oz chicken thigh
24 oz salsa
1 can cream of mushroom soup

  1. Put all ingredients in crock pot and cook until chicken falls off the bone.

  2. If the chicken is frozen it will take about 5 hours on high in the crockpot.
