Really easy and surprisingly good! The original recipe called for sweet potatoes, but I only had red potatoes. (If you're able to, add the potatoes after about an hour of cooking to keep them from getting mushy. I wasn't able to, but I thought it came out fine.) I also added baby carrots. Served with 1/4 cup each brown rice, crusty bread for dipping and lemon and avocado for garnish. Next time will add cabbage and a little hot sauce!

Recipe Ingredients for Crockpot Chicken & Potatoes

3/4 lb chicken thighs, skinless
2 medium red potatoes
1 cup carrots
1 small onion
4 cloves garlic
2 cups reduced-sodium chicken broth
1 tablespoon dried rosemary
1 tsp pepper
1 tsp salt

Recipe Directions for Crockpot Chicken & Potatoes

  1. Combine all ingredients in a crockpot and stir to combine.

  2. Cover and cook on low for about 5 hours or until chicken is cooked and potatoes are tender.
