Recipe Ingredients for Crockpot Chicken Enchilada soup

2 lbs chicken, shredded
16 oz Chicken Stock, low sodium
14 oz pureed tomatoes
14 oz mild enchilada sauce
3 large Carrots, Diced
2 cups Celery stalks, Diced
1 med onion, Diced
1 c. Frozen corn
3 Garlic cloves, chopped
1 t Cumin
1 t. Chili powder
1 t. Salt

Recipe Directions for Crockpot Chicken Enchilada soup

Cook on low for 8 hours. Shred chicken. Add back into soup. Serve with some grated cheese, sour cream, fresh cilantro, and tortilla strips.
