Recipe Ingredients for Crockpot Chicken Chowder

1/2 cup chopped carrots
1 cup skim milk
1 cup low sodium chicken broth
1/8 tsp. white pepper
1 onion, chopped
2 cloves garlic, minced
1 potato, peeled and cubed
1/2 lb. boneless, skinless chicken breasts, cut into 1" pieces
30 oz. creamed corn
1/4 cup dried potato flakes
1/2 cup grated Parmesan cheese

Recipe Directions for Crockpot Chicken Chowder

  1. ombine all ingredients except dried potato flakes and cheese in slow cooker. Cover and cook on low for 5-6 hours or until potatoes are tender and chicken thoroughly cooked.

  2. Add potato flakes and stir well to combine.

  3. Cook mixture on high, uncovered, for 5-10 minutes or until chowder has thickened and dried potato flakes have dissolved.

  4. Top each serving with cheese.
