Heat grapeseed oil in skillet. Add chicken thighs and brown on each side. Place thighs in crockpot. Add chopped garlic, pepper and onion to pan. Saute until slightly soft. Pour pepper/onion mixture and both cans of diced tomatoes over chicken. Stir to coat. Add basil, salt, pepper and other spices to taste.
