Recipe Ingredients for Crockpot Chicken Cacciatore Mexicali

660 grams Onions
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1224 grams (Foster Farms) 112g Thigh Fillets, skinless, boneless (from label)
12 oz Salsa For Chips
5 serving Tomato Paste

Recipe Directions for Crockpot Chicken Cacciatore Mexicali

  1. Spray crock pot with canola oil spray.

  2. Peel and chop up the onions into 1/2 inch size pieces, spread evenly on bottom of crock pot.

  3. De-seed and chop up the red and green bell pepper into 1/2 inch wide strips, then into 1/2 inch squares. Obviously the ends of the strips won't be square. Layer the bell peppers on top of the onions.

  4. Cut the chicken thigh fillets in half. Layer on top of the bell peppers.

  5. Spread the can of tomato paste over the thighs.

  6. Pour the salsa over the top.

  7. Add seasonings to taste, I used pepper and cayenne pepper.

  8. Cook on low for 8 hours.

  9. Serve over your favorite low glycimic index food. I used brown rice.
