This will yield about 10 cups of stew. Great for left overs.

Recipe Ingredients for Crockpot Beef Stew

1 tablespoon oat flour
1/8 teaspoon garlic powder
1/8 teaspoon salt
1 pinch of ground black pepper
1 pound top round steak, cut into 1" cubes
2 teaspoons extra-virgin olive oil
8 ounces button mushrooms, halved
1 onion, chopped
1 tablespoon minced garlic
1 teaspoon dried thyme
28 ounces beef broth (2 14 oz cans)
2 large carrots, peeled and sliced
1 pound potatoes, cut into 1" cubes
14 1/2 ounces cut green beans, (1 14.5 oz can, drained)

Recipe Directions for Crockpot Beef Stew

  1. In a medium resealable plastic bag, combine the flour, garlic powder, salt, and pepper. Add the beef and shake the bag until all the cubes are coated. Refrigerate for at least 15 minutes.

  2. Set a large nonstick frying pan over medium-high heat until it is hot enough for a spritz of water to sizzle on it. Add the oil. Add the reserved beef cubes to the pan in a single layer. Cook for about 1 minute per side, or until browned.

  3. Add the mushrooms, reen beans, onion, garlic, thyme, the broth, the potatoes, carrots, and the prepared meat to a crockpot. Cook on high for 3 hours, or until the beef is fork tender. Season to taste with salt and pepper. Serve immediately.
