Recipe Ingredients for Crockpot Bean and Bacon Chowder

1 1/2 cups dried navy beans, rinsed and drained
2 cups water
6 servings Bacon
1 medium carrot, peeled, cut lengthwise into halves, then cut into 1" pieces
1 small turnip, peeled, cut into 1" pieces
64 g celery rib, chopped
1 medium onion, chopped
1 tsp. dried Italian seasoning
1/8 tsp. ground black pepper
46 oz. Broth Chicken Reduced Sodium
1 cup milk

Recipe Directions for Crockpot Bean and Bacon Chowder

  1. Soak beans overnight in cold water; drain.

  2. Sauté bacon in medium skillet over medium heat. Drain fat; crumble bacon.

  3. Combine carrot, turnip, beans, bacon, celery, onion, Italian seasoning and

  4. pepper in a crock pot/slow cooker. Add broth.

  5. Cover; cook on LOW heat setting for 8 to 10 hours or until beans are tender.

  6. Ladle 2 cups of soup mixture into food processor or blender. Process until

  7. smooth; return to crock pot/slow cooker.

  8. Add milk. Cover; cook on HIGH heat setting for 15 minutes or until

  9. heated through.

  10. Makes 6 servings.
