This is a bland barley soup recipe that I found on the internet and then rescued and made it good :P (hint: soup always needs herbs. no really, trust me)

Recipe Ingredients for Crockpot Barley Vegetable Soup

1 cup Barley, Pearled
1 tsp, crumbled Bay Leaf
0.5 tsp Fennel Seed
9 oz Carrots, Baby
1 medium (2-1/2" dia) Onions
2 stalk, large (11"-12" long) Celery
3 clove Garlic
3 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin
2 cup Corn, Sweet, Yellow
2 cup Cut Green Beans
1.5 tsp Salt, Table
1 tsp Pepper, White
42 oz Vegetable Broth
3 cup (8 fl oz) Water
14 oz Tomatoes Diced
1 Teaspoon Thyme
1 tbsp Olive Oil

Recipe Directions for Crockpot Barley Vegetable Soup

  1. First, chop up the potatos, celery, carrots and onion into your preferred size pieces (I like them small enough that I get more than one thing in a spoon full). Also, mince or crush the garlic.

  2. Put ingredients in your large crockpot in this order: barley, bay leaf, fennel seed, carrots, onion, celery, garlic, potatoes, corn, green beans, salt, pepper, vegetable broth, water.

  3. Cook for 7 or 8 hours.

  4. In a large soup pot, heat the oil and saute the thyme a bit to release the flavor.

  5. Add soup from crockpot to the soup pot.

  6. Add tomatos and stir.

  7. Simmer on medium or low for another 20 minutes.
