Recipe Ingredients for Crock Pot Yam Apple Pork Roast

1 cup Apple Juice From Concentrate
24 oz Yam
2 medium (2-1/2" dia) Onions
680 2/5 grams Fuji Apples
48 oz raw Pork Tenderloin Roast
3 tsp Classic Dijon Mustard
0.13 tbsp Sage, Ground
3 tsp unpacked Sugars, Brown
2 tbsp Corn Starch
1/4 tsp Spices Ground Black Pepper

Recipe Directions for Crock Pot Yam Apple Pork Roast

  1. Pour the apple juice into the Crock Pot and layer with the yams(cut into 1 inch pieces), onions and apples. Note: if this makes the vegetable pile too high then keep out the apple slices.

  2. Place the roast on top and brush with the Dijon mustard. Then add the apples around the sides.

  3. Sprinkle with pepper and sage.

  4. Cover and cook on low until the roast is done, 7-9 hours.

  5. Transfer roast to platter and keep warm. Also transfer the vegetables and apples to a bowl and keep warm.

  6. Make a cornstarch paste and stir into the juices in the crock pot and cook on high until sauce thickens. Serve over the roast.
