Recipe Ingredients for Crock Pot Vegetarian Black Bean Soup

6 serving Beans Black
6 cup (8 fl oz) Water
1 medium raw Carrots
2 medium stalk, raw Celery
3/4 medium White Onion
3 cloves, raw Garlic
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1 pepper Peppers, Jalapeno
0.13 cup Red Lentils
411 grams Diced Tomatoes, No Salt Added
1 tbsp Chili Powder
1 tsp Quality Spices Cumin
1/4 tsp Oregano
0.25 tsp Pepper, Black
1.5 tbsp Balsamic Vinegar
0.25 cup Rice, Brown, Medium-grain
0.75 cup Frozen Cut Corn

Recipe Directions for Crock Pot Vegetarian Black Bean Soup

  1. Soak beans overnight in water to cover

  2. Drain beans and boil in 1 qt water for 2 minutes, then let stand 1 hour, then drain again

  3. Pressure about 5 minutes, then drain and add to crock pot with 6 cups fresh filtered water, all chopped veges, 14 oz can of tomatoes, and spices

  4. Cook on high for 4-5 hours

  5. Add rice and corn and cook on low for 1 more hour

  6. Garnish with fresh cilantro or lime wedge and serve hot with corn bread
