Recipe Ingredients for Crock Pot Vegetable Chili

1 onion, diced
2 clove garlic, minced
1 red pepper, chopped
2 carrots, grated
1 zucchini, diced
3 cups kidney beans
3 cups tomatoes, diced
1/2 cup apple juice
1 1/2 tbl chili powder
1 tsp cumin
1/2 tsp red pepper flakes

Combine all ingredients in a slow cooker. Cover and cook on low for 6-8 hours.
